A sporting event or movie begs for something to snack on. Healthy snacks are important as they provide
fiber and nutrients vital to your diet, without adding unwanted calories. Nutritious foods boost your energy levels during the day and can prevent you from overeating at meals and help you avoid snacking on junk food. The next time you plan to watch your favorite TV show with your partner and want to give your body a break from your regular fattening snacks, why not try this treat. It’s easy to prepare and your partner will be pleasantly surprised.
Flaxseed Crackers
Ingredients:
2 tablespoon of whole golden flaxseeds
2 tablespoon of ground golden flaxseeds
1 1/2 cups all-purpose flour, plus more for dusting
1/2 teaspoon baking powder
1/2 teaspoon coarse salt
2 tablespoons unsalted butter, softened
2 tablespoon finely grated onion
2 tablespoon finely chopped fresh flat-leaf parsley
1/2 cup milk
1 large egg white, lightly beaten
Freshly ground pepper
Directions:
Preheat oven to 325. Put whole and ground flaxseed, flour, baking powder, salt, and butter in the bowl and mix until
mixture resembles coarse meal (you can do it by hand or electric mixer). Stir in onion and parsley. Pour in milk. Mix until dough just comes together.
Divide dough in half. Roll out each piece on a lightly floured surface to a 9-inch square (1/8 inch thick). Transfer to two baking sheets. Cut each square with a fluted pastry wheel or a knife into about 30 crackers (each 1 1/2 inches square).
Brush with egg white; season with pepper, and salt, if desired. As a seasoning you can also use sesame seeds, poppy seeds or whole cumin. Bake until slightly firm, and light brown about 20 minutes.
Place the crackers on the plate. Set yourself up with your favorite beverage (the crackers pair with nice red wine or beer), your remote control and enjoy relaxing in front of your favorite show.
